It sure looks like a fancy plate of chicken rice . The meat, rice and condiments are neatly plated on separate dishes and arranged artfully on a tray. I inhale the tantalising aroma of sesame oil, ginger and chilli and bite into a slice of chicken, savouring its tender, chewy texture. The fluffy brown rice has a nutty flavour that pairs nicely with the chicken and condiments. The light broth is a great palate cleanser. If I didn’t know any better, I would have thought I was tucking into a plate of real chicken rice. Instead, this is the vegan version of chicken rice at Prive, which substitutes chicken with Heura, a plant-based alternative that has a fibrous structure mimicking the mouthfeel of chomping into meat. Still, the resemblance to the real thing is remarkable but more essentially, the food is delicious and I polish off the entire serving. Indeed, the casual dining hangout which has in recent years garnered acclaim for its excellent (real) chicken rice now has an … [Read more...] about Meet the restaurateur creating plant-based versions of Singaporean food

Your favourite F&B outlets are now offering takeaway and delivery options
With Singaporeans being urged to defer non-essential trips to the malls, and purchase food and groceries online , casual lunches and fine dinners might have to wait for a while. This is the best time to support your favourite F&B businesses , which are struggling to cope with the latest social distancing measures and drastic drop in bookings. The situation is grim. Jeremy Nguee, who founded events catering service Preparazzi and Batu Lesung Spice Company and co-founded MRS KUEH, says that the recent launch of his Dream Shop online pop-up, featuring well-loved heritage fare such as Hokkien mee, nasi lemak and ngoh hiang, was a result of him realising the importance of diversifying his operations. “COVID-19 caused all our events to be cancelled but it also forced me to be creative – and fast! It isn’t as if there’s less business gradually. It felt like the earth opened up and you just free fall into nothing,” he told CNA Luxury. “COVID-19 caused all our events to … [Read more...] about Your favourite F&B outlets are now offering takeaway and delivery options
Fighting youthful insecurity and emotions to prove himself to older chefs
Inside a dimly lit basement off Armenian Street, the future of hawker food is taking shape. And it’s looking pretty weird. From a small makeshift kitchen space, Ming Tan prepares unusual versions of Singapore’s staple dishes. Chicken rice has been transformed into a block of mushroom-based vegan rice cake, while carrot cake is a brownish blended mush you slurp from plastic food pouches. Meanwhile, laksa is essentially a bowl of rice krispies you’ll need to hydrate with hot water, while a cup of tau huay has been packed with enough nutritious fibre to get you through the day. Is this some fancy molecular gastronomy take on local food? No, it’s the Substation’s SAD: The Last Meal event, a collaboration between the 32-year-old head chef of Jam at Siri House and visual artist Debbie Ding, which looks at what Singapore’s hawker food might be like 40 to 50 years from now – when everything needs to prepared fast, eaten on-the-go and less unhealthy than it is right now. The old family recipes that let Shang Palace’s chef take fine Chinese cuisine into the future
Two-Michelin-starred Chef Mok Kit Keung’s signature dishes are many – deep-fried whole boneless chicken filled with fried glutinous rice, for instance; or coddled sliced Soon Hock fillet and young coconut in fish broth – but at the end of a resplendent meal at Shang Palace, it’s the deceptively simple dessert of 20-year tangerine peel in red bean soup that lingers bittersweetly in your heart. Not only are the subtle flavours perfectly balanced, the chef’s emotions also come through cleanly: The dish is a tribute of sorts to his late mother, who would preserve batches of her own orange peel each year. “When my mother passed away in January, I found that she had left me boxes and boxes of orange peel. She hadn’t labelled the jars with their years, but when we opened one, it was incredibly fragrant, so it must have been 20 or 30 years old,” he said. Where to eat in Bangkok: From Michelin-starred stalwarts to exciting upstarts
A place where an unabashed passion for eating unites virtually all its citizens, Bangkok has long prided itself on its reputation as a culinary Mecca . And that status was further bolstered in 2018 when Michelin launched its first Thailand guide. Pioneers such as Nahm, Bo.Lan, Paste, Le Du and Issaya Siamese Club have long been influential in applying significant tweaks to the upscale Thai dining experience in the Kingdom’s capital. But the arrival of the French fine dining bible has helped a fresh crop of Thai chefs reserve seats at the very top table of the city’s fine dining scene. This phalanx of exciting upstarts includes Michelin star winners Saawaan and Sorn and future near-certs 80/20 and Front Room. All four of which benefit from the cooking skills of Thais. Their boundary-burning flair is indicative of a dining scene that is finally providing a stage for gifted Thai tyros to push the limits of their native cuisine – and also to branch out in new directions. PDM ‘only voice of the people’ suffering from inflation, instability: Fazlur Rehman
ISLAMABAD: The Pakistan Democratic Movement (PDM) is the "only voice of the people" who are suffering from rampant inflation and instability in the country, the chief of the Opposition-led anti-government coalition, Maulana Fazlur Rehman, said Sunday. Speaking to the media alongside PPP Chairperson Bilawal Bhutto-Zardari after the two met here in Islamabad, Fazlur Rehman said the PDM was "fully united" for the upcoming Senate elections 2021 and that leadership meetings would be held immediately after the polls. "A new strategy will be worked out and clarified," the PDM and JUI-F chief said. "The PDM is the only voice of the people across the country and getting rid of such rulers [incumbent government] will be a service to the people of Pakistan." Clarifying that the PDM was just the name of the movement and not an electoral alliance, he said the Opposition parties were trying not to cut each other's votes in the election from a moral perspective. "They thought that … [Read more...] about PDM ‘only voice of the people’ suffering from inflation, instability: Fazlur Rehman
Gucci posted a load of weird memes and the internet is cringing hard
A Gucci campaign for watches is probably the last place you'd expect to see the Arthur meme, or a post featuring the words "me vs the guy she says I shouldn’t worry about." How Mank used visual effects to turn back the clock on Hollywood
There’s something appropriate about David Fincher’s Mank premiering during one of the most unusual years Hollywood has experienced in several generations. The tale of eccentric, unpredictable screenwriter Herman J. Mankiewicz’s efforts to pen the screenplay for Citizen Kane , Mank is a throwback to American cinema’s golden age, meticulously filmed in black and white and set in and around pre-war Hollywood. In order to recreate the historic look and feel of the era (and the film itself), Fincher and co-producer Peter Mavromates , who also served as post-production supervisor and visual effects producer on the film, worked with several VFX studios to turn back the clock for Mankiewicz’s saga. Digital Trends spoke to Mavromates about his work on Mank , which is available now on Netflix and a contender for an Oscar nomination in the visual effects category , to find out how the film used VFX to create its cinematic time capsule. Digital Trends: Mank isn’t a … [Read more...] about How Mank used visual effects to turn back the clock on Hollywood
Exclusive: Tesla in talks to buy low carbon nickel from Canada – sources
LONDON: Tesla is in discussions with Canadian miner Giga Metals about helping to develop a large mine that would give the electric carmaker access to low carbon nickel for its batteries, three sources familiar with the matter said. Alongside its goal to reduce pollution from driving, Tesla is also striving to reduce its own carbon footprint. "Tesla will give you a giant contract for a long period of time if you mine nickel efficiently and in an environmentally sensitive way," CEO Elon Musk said in July. Giga Metals's low carbon nickel plans include turning waste from its mining operations into cement type rock using carbon dioxide in the atmosphere, and using hydropower. Giga Metals's President Martin Vydra declined to comment on any talks with Tesla, but said: "Giga is actively engaged, and has been for some time, with automakers regarding our ability to produce carbon neutral nickel. "The cost of developing our project, excluding bringing hydroelectric power to the site, … [Read more...] about Exclusive: Tesla in talks to buy low carbon nickel from Canada – sources
